Watermelon Salad

Recently, I was invited to be part of a photo series for Natalie Annette Designs' new collection of tableware, and I was looking to make something colorful to bring to the occasion. I'm a firm believer that we eat with the eyes first, so I wanted to make something that 1) people could immediately identify the ingredients and 2) something that would make their mouths water at just the sight of it.

It's no surprise that Houston is unreasonably warm during the summer months, so I wanted to make something that could also keep the guests cool and hydrated. Watermelon is the perfect fruit for any summer get together! It has a high water content, so it will keep that fluid intake up, plus it's not super messy when you already have it cut up like I did for this salad. Ready to put this one together? Here we go...

Ingredients:

  • Watermelon
  • Feta Cheese
  • Mint

Directions

Mix all ingredients and serve immediately. Enjoy!

That's right. There's no dressing! You can add it if you want to, but I really don't think it needs it. The watermelon is juicy, the creamy feta cheese gives a little twang that you need, and the mint keeps it refreshing.
